The texture of these is unbeatable. Also they're really fun to make. Usually I just make 2 logs of 3x3 cookies and 1 log of 2x3 cookies.
My absolute favorite. Comes together really quick and are always super good. I make smaller cookies and bake them for the same time for a firmer texture.
I usually double this recipe and make 4 cakes though you can get 5 out of them if you use small containers. I really can't stress how good these things are. I'm not even a big chocolate fan and ohhh my god I swear I want to make these things twice a week.
These are my go-to doughnut recipe because of how easy and delicious they are. I add some extra cardamom and serve them with black tea or a good chai (the Market Chai from Little Village Tea & Spice is my personal favorite- and you can support a small business :-) ). You can save the oil from frying and reuse it too!
These are perfect on a cold evening. I recommend eating them all immediately because they don't keep well at all though.

Ingredients
➙ 1 stick or 1/2 cup butter, softened for 30 seconds in the microwave and mixed until a uniform texture is achieved- can also soften at room temperature for several hours |
➙ 1 cup and 2 tablespoons of white granulated sugar |
➙ 1 egg, cold or room temperature |
➙ 1/2 teaspoon baking powder |
➙ 1/4 teaspoon baking soda |
➙ 1/4 teaspoon cream of tartar |
➙ Vanilla to taste (1/2-1 tsp is probably best) |
➙ 1 tablespoon ground cinnamon or however much you like |
➙ 1 and 1/2 cup all purpose flour |
Instructions
❶ Preheat the oven to 375 degrees Farenheit. |
❷ Thoroughly mix all ingredients but the flour until a grainy and slightly fluffy paste. |
❸ Add the flour one half cup at a time. |
❹ Form golf ball sized dough balls and place them an inch or two apart on a lined baking tray. |
❺ Bake for, say, 15-17 minutes or until flat, crackly, and noticeably darker. You can also bake for less time if you prefer a softer cookie. |
